Learn how to make delicious Vanilla Bean Brown Butter Cheesecake. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, browned
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup sour cream
  • 3 large eggs
  • 1 vanilla bean, seeds scraped
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

When life gets busy, and you find yourself lacking a vanilla bean, a teaspoon of vanilla bean paste can serve as a convenient substitute. The key is to use quality ingredients, ensuring that each component of your cheesecake shines through with its full flavor.

Instructions

  1. Preheat your oven to 325°F. Grease a 9-inch springform pan lightly and line the bottom with parchment paper.
  2. In a small saucepan, melt the butter over medium heat, swirling occasionally, until it turns a deep golden brown and emits a nutty aroma, about 5-7 minutes. Set aside to cool slightly.
  3. In a bowl, combine the graham cracker crumbs and granulated sugar. Pour in the brown butter and mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for 10 minutes, or until lightly golden. Remove from the oven and let cool on a wire rack.
  5. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the sour cream, vanilla bean seeds, vanilla extract, and salt, mixing until well combined.
  6. One at a time, add the eggs, beating on low speed until just incorporated after each addition. Overmixing can cause cracks in the cheesecake.
  7. Pour the cream cheese mixture over the prepared crust, smoothing the top with a spatula.
  8. Place the cheesecake on a baking sheet and bake for 50-60 minutes, or until the edges are set but the center still jiggles slightly.
  9. Turn off the oven and crack the door open, allowing the cheesecake to cool slowly for about an hour. This helps prevent cracking.
  10. Transfer the cheesecake to the fridge for at least 4 hours, preferably overnight, to set completely before serving.
