  • 1 pound beef sirloin, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 cup coconut milk
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 1 tablespoon red curry paste
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 cup chopped peanuts for garnish
  • Fresh cilantro for garnish
  • Cooked jasmine rice for serving

Substitutions are always part of my cooking adventures. Feel free to swap coconut milk with light coconut milk for a lighter version, or use chicken breast instead of beef for a different twist. After all, cooking is all about making it your own!

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned, about 5-7 minutes. Remove the beef from the skillet and set aside.
  2. In the same skillet, reduce the heat to medium and add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  3. Add the red curry paste, coconut milk, peanut butter, soy sauce, fish sauce, lime juice, and brown sugar. Stir well to combine, allowing the peanut butter to melt and the sauce to thicken, about 3-4 minutes.
  4. Return the cooked beef to the skillet, tossing to coat the beef in the sauce. Simmer for an additional 5 minutes, letting the flavors meld together.
  5. Serve the Thai Peanut Beef over cooked jasmine rice, garnished with chopped peanuts and fresh cilantro. Enjoy the burst of flavors that warm both the heart and soul!
