  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Let’s gather everything you’ll need to create this delightful dish. These ingredients are easy to find and come together to create a symphony of flavors:

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg, lightly beaten
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tablespoons cilantro, chopped
  • 1 teaspoon fish sauce
  • 1 tablespoon oil (vegetable or coconut oil)
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • Salt and pepper to taste
  • Optional: chopped peanuts and fresh basil for garnish

If you’re missing any of these, don’t worry! You can substitute ground turkey for chicken, or use panko instead of regular breadcrumbs. The idea is to keep it flexible and stress-free, just like a meal in my grandmother’s kitchen.

Instructions

  1. In a large bowl, combine the ground chicken, breadcrumbs, egg, ginger, garlic, cilantro, fish sauce, salt, and pepper. Mix well until all ingredients are fully incorporated.
  2. Using your hands or a small scoop, shape the mixture into 1-inch meatballs.
  3. Heat the oil in a large skillet over medium heat. Add the meatballs in batches, cooking for about 5-6 minutes, turning occasionally until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the red curry paste and cook for about 1 minute until fragrant. Stir in the coconut milk, lime juice, and brown sugar. Bring to a simmer.
  5. Add the sliced bell pepper to the curry sauce and cook for 2-3 minutes until slightly tender.
  6. Return the meatballs to the skillet, coating them with the sauce. Simmer for an additional 5 minutes, allowing the flavors to meld together.
  7. Taste and adjust seasoning as needed. Garnish with chopped peanuts and basil before serving.

Cooking together has always been a way for me to connect with my family, and this dish is no exception. The aroma that fills the kitchen is the perfect invitation for everyone to gather around the table.
