- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 avocado, diced
- 1 lime, juiced
- 1/4 cup cilantro, chopped
- 1/2 cup shredded cheese (optional)
- 4 cups cooked brown rice or quinoa
Feel free to substitute or add ingredients as per your taste. For instance, swap the black beans for chickpeas or add a bit of heat with jalapeños if you like it spicy.
Instructions
- Preheat your oven to 425°F. Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the sweet potatoes with olive oil, smoked paprika, cumin, chili powder, salt, and pepper until well coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
- While the sweet potatoes are roasting, prepare the rest of the ingredients. In a large skillet over medium heat, combine the black beans, corn, red bell pepper, and red onion. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly softened.
- In a small bowl, mix the diced avocado with lime juice and cilantro. Set aside.
- Once the sweet potatoes are done, assemble your taco bowls. Start with a base of cooked brown rice or quinoa, top with the roasted sweet potatoes, black bean mixture, and avocado. Sprinkle with cheese if desired.
- Serve immediately, garnished with additional cilantro and a squeeze of lime juice for an extra burst of flavor.
