Learn how to make delicious Sweet Chili Garlic Pork Bites. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 2 tablespoons olive oil (or vegetable oil for a neutral flavor)
  • 3 cloves garlic, minced
  • 1/4 cup sweet chili sauce (store-bought or homemade—I’ll share a quick tip below!)
  • 2 tablespoons soy sauce (use low-sodium for a lighter option)
  • 1 tablespoon honey or maple syrup (for natural sweetness)
  • 1 teaspoon freshly grated ginger (optional, but adds lovely warmth)
  • 1/2 teaspoon crushed red pepper flakes (adjust to your heat preference)
  • Salt and freshly ground black pepper, to taste
  • 2 green onions, sliced thinly (for garnish)
  • Sesame seeds (optional, for a little crunch and extra flair)

If you don’t have pork tenderloin on hand, boneless pork shoulder or even chicken thighs work beautifully here. Just remember to adjust cooking times slightly to ensure tenderness. For a gluten-free version, swap soy sauce with tamari or coconut aminos. And if you’re feeling adventurous, swapping honey with brown sugar gives the sauce a deeper caramel note that’s equally delightful.

Instructions

  1. Start by patting your pork cubes dry with paper towels. This little step helps the pork brown beautifully instead of steaming in the pan.
  2. Heat the olive oil in a large skillet over medium-high heat. When the oil is shimmering but not smoking, add the pork cubes in a single layer. Let them cook undisturbed for 2-3 minutes to develop a golden crust.
  3. Flip the pork pieces and cook for another 2 minutes until browned on all sides. Remove the pork from the skillet and set aside. I like to keep the pork warm by loosely tenting it with foil while I prepare the sauce.
  4. Reduce the heat to medium. Add the minced garlic and grated ginger to the skillet and sauté for about 30 seconds until fragrant—watch closely so the garlic doesn’t burn!
  5. Pour in the sweet chili sauce, soy sauce, and honey. Stir well to combine and let the sauce bubble gently for 2-3 minutes until it thickens slightly. This glaze is what makes every bite shine.
  6. Return the pork to the skillet, tossing to coat each piece in the sticky sauce. Cook for an additional 2 minutes to marry the flavors and heat the pork through.
  7. Season with crushed red pepper flakes, salt, and black pepper to taste. Remember, you can always add more heat, but you can’t take it away, so start small if you’re unsure.
  8. Serve immediately, garnished with sliced green onions and a sprinkle of sesame seeds for texture and color.

One of my favorite memories tied to this recipe is when I made it for a casual Friday night dinner. My kids, usually picky about pork, couldn’t get enough. They loved dipping the bites in extra sauce and begged for seconds while we all talked about our day. It’s moments like those that remind me why I keep coming back to recipes that bring joy and simplicity together.
