  • 12 ounces flank steak, thinly sliced against the grain
  • 8 ounces rice noodles or your favorite Asian-style noodles
  • 2 tablespoons soy sauce (use low sodium if preferred)
  • 1 tablespoon hoisin sauce
  • 1 tablespoon honey or maple syrup (for a touch of sweetness)
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 12 teaspoons chili garlic sauce or Sriracha (adjust to taste for spice)
  • 1 tablespoon vegetable oil (for cooking)
  • 1 cup shredded carrots
  • 1 cup thinly sliced bell peppers (any color you like)
  • 1 cup snap peas, trimmed and halved
  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds (optional, for garnish)
  • Fresh cilantro leaves for garnish (optional)
  • Juice of half a lime (optional, for brightness)

If you’re short on flank steak, skirt steak or sirloin work well too. For noodles, rice vermicelli or even spaghetti can stand in a pinch. And if you want to keep it vegetarian, swap the beef for marinated tofu or extra veggies—just make sure to give them a good sear for texture.

Instructions

  1. Start by bringing a large pot of water to boil. Cook your rice noodles according to package instructions until tender but still firm. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. While the noodles cook, prepare the marinade and sauce. In a medium bowl, whisk together soy sauce, hoisin sauce, honey, sesame oil, minced garlic, grated ginger, and chili garlic sauce. Set half of this mixture aside for the sauce, and use the other half to marinate the sliced beef.
  3. Place the thinly sliced flank steak in the marinade bowl, toss to coat well, and let it sit for at least 10 minutes. If you have more time, marinate up to 30 minutes to deepen the flavor.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Let it sear undisturbed for about 2 minutes, then stir-fry for another 2-3 minutes until cooked through and slightly caramelized. Remove the beef from the pan and set aside.
  5. In the same skillet, add the fresh vegetables—shredded carrots, bell peppers, and snap peas. Stir-fry for 2-3 minutes until they are crisp-tender but still vibrant. Pour in the reserved sauce mixture and toss to coat the veggies evenly.
  6. Return the cooked beef to the skillet and stir everything together to combine and heat through for another minute.
  7. To assemble, divide the cooked noodles among bowls. Top with the sweet and spicy beef and vegetable mixture.
  8. Garnish with sliced green onions, toasted sesame seeds, fresh cilantro, and a squeeze of lime juice for an extra pop of brightness.

One of my favorite memories is how my kids would eagerly help with the garnishes—sprinkling sesame seeds and squeezing lime juice, making the meal feel like a family celebration even on a regular Tuesday night.
