  • 2 green onions, thinly sliced (optional)
  • 1/4 cup sour cream (for extra creaminess, optional)
  • Non-stick cooking spray or a little extra butter for greasing muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin with non-stick spray or butter to prevent sticking.
  2. Place the peeled and cubed potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook until tender, about 15-20 minutes. You’ll know they’re ready when a fork slides in easily.
