- 4 bone-in pork chops (about 1 inch thick)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 5 medium potatoes, thinly sliced
- 1 medium onion, thinly sliced
- 2 cups shredded cheddar cheese
- 3 cups milk
- 1/4 cup all-purpose flour
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
If you’re out of cheddar cheese, a mix of mozzarella and parmesan can also work beautifully, adding a different layer of flavor. And if you’re watching your sodium intake, feel free to adjust the salt to your taste.
Instructions
Creating this dish might just become one of your favorite culinary rituals, as you blend layers of flavor into a single dish that’s as satisfying to prepare as it is to eat:
- Preheat your oven to 375°F (190°C). Grease a large baking dish with butter or non-stick spray.
- Season the pork chops with salt, pepper, and garlic powder on both sides.
- In a large skillet, heat olive oil over medium-high heat. Sear the pork chops for about 3-4 minutes on each side, until browned. Remove and set aside.
- In the same skillet, melt butter. Add flour and whisk for about 1 minute to create a roux.
- Slowly add milk to the roux, whisking continuously to avoid lumps. Bring to a simmer until the sauce thickens, then add thyme and paprika.
- Layer the potatoes and onions in the prepared baking dish. Pour half of the sauce over the potatoes.
- Sprinkle a layer of cheddar cheese over the potatoes, then place the seared pork chops on top.
- Pour the remaining sauce over the pork chops and sprinkle the rest of the cheese on top.
- Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes, or until potatoes are tender and cheese is golden brown.
