Learn how to make delicious Smothered Meatball and Pasta Bake. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 pound ground beef (or a mix of beef and pork for extra flavor)
  • 1/2 cup breadcrumbs (panko works great for a lighter texture)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces pasta (penne or rigatoni are my favorites)
  • 3 cups marinara sauce (homemade or store-bought—choose one you love!)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley (optional, for garnish)
  • Olive oil, for sautéing

Substitution tips: If you prefer a lighter option, ground turkey or chicken work well here. For a gluten-free version, swap breadcrumbs and pasta with gluten-free alternatives. And if you want to add a little green, toss in some chopped spinach or mushrooms to the sauce—it’s a sneaky way to get extra veggies into the mix!

Instructions

  1. Preheat your oven to 375°F (190°C). While it warms up, bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Drain and set aside.
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan, egg, minced garlic, oregano, basil, salt, and pepper. Use your hands to gently mix everything together—this always reminds me of helping Grandma knead dough, the kind of kitchen moment that feels like magic in the making.
  3. Form the mixture into meatballs about the size of a golf ball. You should get roughly 18-20 meatballs.
  4. Heat a tablespoon of olive oil in a large skillet over medium heat. Add the meatballs in batches, being careful not to overcrowd the pan. Brown them on all sides, about 5-7 minutes total. They don’t need to be fully cooked through at this stage since they’ll finish baking in the oven.
  5. In a large baking dish, spread a thin layer of marinara sauce on the bottom. Add half of the cooked pasta, then arrange half of the browned meatballs on top. Spoon over a generous amount of marinara sauce, then sprinkle with some mozzarella cheese.
  6. Repeat the layering with the remaining pasta, meatballs, marinara sauce, and mozzarella cheese. The layering is what gives this bake its signature smothered look and that irresistible cheesy crust.
  7. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake an additional 10-15 minutes until the cheese is bubbly and golden brown.
  8. Let the bake rest for 5 minutes before serving. Sprinkle with fresh parsley if you like a pop of color and freshness. This pause is key—I’ve learned that letting dishes rest gives flavors a chance to settle and makes serving easier.
