Learn how to make delicious Slow Cooker Indian Beef Curry. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth (or substitute with vegetable broth for a lighter taste)
  • 1/2 cup plain Greek yogurt (or coconut yogurt for a dairy-free option)
  • 2 tablespoons garam masala
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper (adjust based on your spice preference)
  • 1 teaspoon paprika
  • 2 tablespoons vegetable oil or ghee
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of half a lemon

Substitutions are easy here, especially if you need to adjust for dietary needs or what’s in your pantry. For example, if you want a richer flavor, swap beef broth for chicken broth or use homemade stock. And if fresh ginger isn’t on hand, 1 teaspoon of ground ginger works in a pinch, though fresh always brings that extra zing that reminds me of my grandmother’s kitchen.

Instructions

  1. Start by heating the vegetable oil or ghee in a large skillet over medium-high heat. Once hot, add the beef cubes in batches, browning them on all sides. This step locks in flavor and adds a beautiful caramelized depth to the curry—something my grandmother always insisted on, and I’ve never skipped since.
  2. Transfer the browned beef to your slow cooker. In the same skillet, add the chopped onion, cooking until softened and golden, about 5-7 minutes. This slow caramelizing brings out a natural sweetness that balances the spices perfectly.
  3. Add the minced garlic and grated ginger to the skillet, sautéing for another minute until fragrant.
  4. Stir in all the spices: garam masala, cumin, coriander, turmeric, cayenne, and paprika. Toasting the spices briefly in the pan releases their oils and intensifies the aroma—trust me, your kitchen will smell incredible at this point!
  5. Pour in the diced tomatoes and beef broth, scraping up any browned bits from the bottom of the skillet. Let this mixture simmer for 2-3 minutes to marry the flavors.
  6. Pour the entire mixture over the beef in the slow cooker. Cover and cook on low for 7-8 hours, or on high for 4-5 hours. The low and slow method is my go-to because it yields the most tender, flavorful beef, reminiscent of the slow Sunday meals I grew up with.
  7. About 30 minutes before serving, stir in the Greek yogurt and lemon juice. This adds a creamy tang that brightens the dish without overpowering those deep spices.
  8. Taste and adjust salt or spice levels as needed. Garnish with fresh cilantro before serving.
