- 1 pound shrimp, peeled and deveined
- 1/2 pound lobster meat, chopped
- 2 tablespoons butter
- 1 cup diced onions
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups seafood stock
- 1 cup heavy cream
- 1 cup frozen peas
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 1 package refrigerated biscuit dough
Instructions
- Preheat your oven to 400°F. Grease a large baking dish with butter.
- In a large skillet, melt the butter over medium heat. Add onions, carrots, and celery. Sauté for about 5 minutes until the vegetables are tender.
- Add the garlic and cook for another minute until fragrant.
- Stir in the flour, cooking for 2 minutes to eliminate the raw flour taste.
- Gradually add the seafood stock, stirring continuously to avoid lumps. Cook until the mixture thickens, about 3-4 minutes.
- Stir in the heavy cream, shrimp, lobster, peas, and thyme. Season with salt and pepper to taste. Allow the mixture to simmer for another 5 minutes.
- Transfer the seafood mixture to the prepared baking dish. Top with biscuit dough, ensuring it covers the filling evenly.
- Bake in the preheated oven for 15-18 minutes, or until the biscuits are golden brown and cooked through.
- Remove from oven and let it rest for 5 minutes before serving.
