Here’s what you’ll need to whip up this delightful dish:

  • 4 bone-in pork chops (about 1 inch thick)
  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried thyme (or fresh if you have it!)
  • Salt and pepper, to taste
  • 1 cup green beans, trimmed (optional)

Feel free to substitute the pork chops for chicken thighs or even tofu for a vegetarian option. And if you’re not a fan of green beans, broccoli or carrots work beautifully as well!

Instructions

  1. Preheat your oven to 400°F (200°C). This ensures your pork chops will get that lovely golden crust!
  2. In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, smoked paprika, thyme, salt, and pepper until well coated.
  3. Spread the seasoned potatoes out on a large baking sheet in a single layer, leaving space in the center for the pork chops.
  4. Season the pork chops with salt, pepper, and a sprinkle of paprika on both sides. Place them in the center of the baking sheet.
  5. If using, scatter the trimmed green beans around the pork and potatoes.
  6. Bake in the preheated oven for about 25-30 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and the potatoes are tender and golden brown.
  7. Once done, remove the pan from the oven and let it rest for about 5 minutes before serving. This lets the juices redistribute in the pork chops!
