Here’s what you’ll need to whip up this delightful dish:
- 4 bone-in pork chops (about 1 inch thick)
- 1.5 pounds baby potatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon smoked paprika
- 1 teaspoon dried thyme (or fresh if you have it!)
- Salt and pepper, to taste
- 1 cup green beans, trimmed (optional)
Feel free to substitute the pork chops for chicken thighs or even tofu for a vegetarian option. And if you’re not a fan of green beans, broccoli or carrots work beautifully as well!
Instructions
- Preheat your oven to 400°F (200°C). This ensures your pork chops will get that lovely golden crust!
- In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, smoked paprika, thyme, salt, and pepper until well coated.
- Spread the seasoned potatoes out on a large baking sheet in a single layer, leaving space in the center for the pork chops.
- Season the pork chops with salt, pepper, and a sprinkle of paprika on both sides. Place them in the center of the baking sheet.
- If using, scatter the trimmed green beans around the pork and potatoes.
- Bake in the preheated oven for about 25-30 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and the potatoes are tender and golden brown.
- Once done, remove the pan from the oven and let it rest for about 5 minutes before serving. This lets the juices redistribute in the pork chops!
