Learn how to make delicious Sausage and Egg Biscuit Casserole. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 pound breakfast sausage (pork or turkey, depending on preference)
  • 8 large eggs
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional, but adds great flavor)
  • 2 cups shredded sharp cheddar cheese
  • 1 can (16.3 oz) refrigerated flaky biscuit dough (about 8 biscuits)
  • 2 tablespoons butter, melted (for brushing biscuits)

Substitution tips: If you want to lighten things up, using turkey sausage works beautifully without losing flavor. For a dairy-free version, swap the whole milk for unsweetened almond milk and use a dairy-free cheese alternative. And if you prefer homemade biscuits, go for your favorite recipe—it’s a lovely way to add a personal touch!

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
  2. In a skillet over medium heat, cook the sausage until browned and cooked through, breaking it up with a spatula as it cooks. Drain any excess fat and set aside.
  3. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and smoked paprika until well combined.
  4. Tear each biscuit into quarters and spread evenly across the bottom of the prepared baking dish.
  5. Sprinkle the cooked sausage evenly over the biscuit pieces.
  6. Pour the egg mixture over the sausage and biscuits, making sure everything is evenly soaked.
  7. Sprinkle the shredded cheddar cheese over the top of the casserole.
  8. Brush the biscuit pieces lightly with melted butter to help them brown beautifully during baking.
  9. Bake uncovered for 35-40 minutes, or until the eggs are set and the biscuits are golden brown on top. A knife inserted in the center should come out clean.
  10. Let the casserole cool for about 5 minutes before serving—this helps it set up and makes it easier to slice.

One of my favorite tips from years of making this dish: don’t rush the resting time after baking. That little pause lets all the flavors meld and gives the casserole a perfect, satisfying texture. Also, feel free to customize the spices based on what your family loves. I often add a pinch of cayenne for a little kick, especially on chilly mornings.
