Ingredients
- 1 pound breakfast sausage (pork or turkey, depending on preference)
- 8 large eggs
- 1 cup whole milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika (optional, but adds great flavor)
- 2 cups shredded sharp cheddar cheese
- 1 can (16.3 oz) refrigerated flaky biscuit dough (about 8 biscuits)
- 2 tablespoons butter, melted (for brushing biscuits)
Substitution tips: If you want to lighten things up, using turkey sausage works beautifully without losing flavor. For a dairy-free version, swap the whole milk for unsweetened almond milk and use a dairy-free cheese alternative. And if you prefer homemade biscuits, go for your favorite recipe—it’s a lovely way to add a personal touch!
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
- In a skillet over medium heat, cook the sausage until browned and cooked through, breaking it up with a spatula as it cooks. Drain any excess fat and set aside.
- In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and smoked paprika until well combined.
- Tear each biscuit into quarters and spread evenly across the bottom of the prepared baking dish.
- Sprinkle the cooked sausage evenly over the biscuit pieces.
- Pour the egg mixture over the sausage and biscuits, making sure everything is evenly soaked.
- Sprinkle the shredded cheddar cheese over the top of the casserole.
- Brush the biscuit pieces lightly with melted butter to help them brown beautifully during baking.
- Bake uncovered for 35-40 minutes, or until the eggs are set and the biscuits are golden brown on top. A knife inserted in the center should come out clean.
- Let the casserole cool for about 5 minutes before serving—this helps it set up and makes it easier to slice.
One of my favorite tips from years of making this dish: don’t rush the resting time after baking. That little pause lets all the flavors meld and gives the casserole a perfect, satisfying texture. Also, feel free to customize the spices based on what your family loves. I often add a pinch of cayenne for a little kick, especially on chilly mornings.
