  7. Transfer to a serving dish and sprinkle with fresh parsley for a pop of color and freshness.

Minced garlic tends to hold up well in this recipe, but if you want a milder, creamier garlic flavor, you can roast whole garlic cloves alongside the carrots and mash them into a spread later.
