Ingredients
- 1 large flatbread or naan (about 8–10 inches in diameter)
- 1 cup cooked chicken, shredded or diced (rotisserie chicken works great!)
- 1/4 cup ranch dressing (store-bought or homemade for that extra love)
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- 2 tablespoons chopped green onions
- 1 teaspoon taco seasoning (store-bought or homemade blend of chili powder, cumin, garlic powder, and paprika)
- Fresh cilantro leaves for garnish (optional but highly recommended)
- Olive oil for brushing flatbread
Substitution suggestions: If you don’t have cheddar on hand, Monterey Jack or mozzarella offer a mild, melty alternative. For ranch dressing, Greek yogurt mixed with a ranch seasoning packet can be a lighter swap. And if flatbread isn’t available, pita bread or even a tortilla can work in a pinch.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- In a medium bowl, toss the cooked chicken with taco seasoning until evenly coated. This is where the magic of flavor begins—don’t be shy with the seasoning!
- Lay the flatbread on your prepared baking sheet. Brush the surface lightly with olive oil to help it crisp up beautifully.
- Spread the ranch dressing evenly over the flatbread, leaving a small border around the edges for a nice, crispy crust.
- Scatter the seasoned chicken evenly on top of the ranch layer.
- Sprinkle shredded cheddar cheese over the chicken, covering the flatbread generously for that gooey, melty goodness.
- Add diced tomatoes, sliced black olives, and green onions on top of the cheese for bursts of freshness and color.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly and the edges of the flatbread are golden brown.
- Remove from the oven and garnish with fresh cilantro leaves, if using. Let the flatbread cool for a minute before slicing into wedges.
