- 1 pound thinly sliced ribeye steak (can substitute with sirloin or flank steak)
- 1 tablespoon olive oil
- 1 medium green bell pepper, thinly sliced
- 1 medium yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced (optional but adds great earthiness)
- 1 teaspoon Worcestershire sauce
- Salt and freshly ground black pepper, to taste
- 4 slices provolone cheese (can substitute with mozzarella or American cheese)
- 2 cups cooked white or brown rice (or cauliflower rice for a low-carb option)
- 1 tablespoon butter
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Start by prepping your ingredients: thinly slice the ribeye steak, bell pepper, onion, and mushrooms if using. Mince the garlic and set everything aside.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the sliced bell peppers and onions. Sauté for about 5 minutes until they start to soften and caramelize a little. Add mushrooms and garlic, cooking for another 3 minutes. This step fills the kitchen with that nostalgic aroma that always brings me back to my grandmother’s kitchen.
- Push the veggies to the side of the pan and add the sliced steak in a single layer. Season with salt, pepper, and Worcestershire sauce. Let the steak sear undisturbed for about 2 minutes, then stir and cook for another 2 minutes until just cooked through but still tender.
- Mix the steak and veggies together in the pan, then reduce the heat to low. Tear the provolone cheese slices and layer them over the meat and vegetables. Cover the pan with a lid for a couple of minutes until the cheese melts perfectly gooey.
- While the cheese is melting, warm your cooked rice or cauliflower rice in the microwave or on the stovetop with a little butter to keep it fluffy and rich.
- To assemble, spoon the warm rice into bowls, then top generously with the cheesy steak and veggie mixture. Garnish with freshly chopped parsley if you like for a pop of color and freshness.
