- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup whole milk
- 1 1/2 cups fresh peaches, diced
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Feel free to substitute the fresh peaches with canned ones when out of season, and use almond extract for a nutty twist.
Instructions
- Preheat your oven to 350°F. Grease a Twinkie or mini loaf pan.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, then add the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture.
- In a small saucepan over medium heat, combine the peaches, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Cook until the mixture thickens, about 5 minutes.
- Fill each section of the pan halfway with batter, add a spoonful of the peach mixture, then cover with more batter.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely. Enjoy this moment—it’s where dessert meets joy.
