  • 1 1/2 cups fresh peaches, diced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Feel free to substitute the fresh peaches with canned ones when out of season, and use almond extract for a nutty twist.

Instructions

  1. Preheat your oven to 350°F. Grease a Twinkie or mini loaf pan.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, then add the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture.
  6. In a small saucepan over medium heat, combine the peaches, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Cook until the mixture thickens, about 5 minutes.
  7. Fill each section of the pan halfway with batter, add a spoonful of the peach mixture, then cover with more batter.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely. Enjoy this moment—it’s where dessert meets joy.
