- 1 cup all-purpose flour
- 2 tablespoons granulated sugar

- 1 cup buttermilk (or milk with a splash of vinegar as a substitute)
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Optional: chocolate chips, blueberries, or diced strawberries for variety
Instructions
- Preheat your oven to 350°F and grease a mini muffin tin generously with butter or non-stick spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Stir until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are okay.
- For a fun twist, fold in chocolate chips, blueberries, or strawberries if desired.
- Spoon the batter into the prepared mini muffin tin, filling each about 2/3 full.
- Bake for 12-15 minutes, or until the poppers are golden brown and a toothpick inserted into the center comes out clean.
- Allow the poppers to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
