Instructions

  1. Preheat your oven to 350°F and grease a mini muffin tin generously with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Stir until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. For a fun twist, fold in chocolate chips, blueberries, or strawberries if desired.
  6. Spoon the batter into the prepared mini muffin tin, filling each about 2/3 full.
