Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, whisk together the honey, minced garlic, soy sauce, and Dijon mustard. Set aside.
- Place the sliced kielbasa, bell peppers, zucchini, and red onion on the prepared baking sheet.
- Drizzle the olive oil over the top and season with salt and pepper. Toss to coat everything evenly.
- Pour the honey garlic mixture over the kielbasa and vegetables, ensuring everything is well coated.
- If using, sprinkle the red pepper flakes for a touch of heat.
- Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and the kielbasa is caramelized.
