- 2 cups rolled oats
- 1 1/2 cups milk (almond milk works well for a dairy-free option)
- 2 large apples, peeled, cored, and diced
- 1/4 cup honey or maple syrup
- 1/4 cup melted butter or coconut oil

- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans (optional)
- 2 eggs
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir until well mixed.
- In another bowl, whisk together the milk, eggs, melted butter, honey, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined.
- Fold in the diced apples and half of the walnuts or pecans, if using.
- Spread the mixture evenly into the prepared baking dish and sprinkle the remaining nuts on top.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the center is set.
- Allow it to cool slightly before serving, as the flavors meld beautifully during this time.
