Ingredients
Scale
- 1 cup creamy peanut butter
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1 cup chocolate chips, melted (optional for dipping)
If you’re looking for substitutions, feel free to swap the graham cracker crumbs with crushed digestive biscuits or even oat cookies for a slightly different texture.
Instructions
- In a large mixing bowl, combine the peanut butter, cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. This is where my kids love to get involved, wielding the spatula with determination.
- Gently fold in the graham cracker crumbs, making sure everything is well combined. The texture should be thick enough to hold its shape, reminiscent of those countless afternoons spent experimenting in my grandmother’s kitchen.
- Using a small cookie scoop or your hands, roll the mixture into bite-sized balls. Place them on a baking sheet lined with parchment paper.
- For an extra touch of decadence, dip each bite into the melted chocolate and return them to the parchment paper. My husband often sneaks in at this point, hoping to snag a chocolate-dipped sample!
- Refrigerate the bites for at least 30 minutes, allowing them to set. This is a great time to catch up with family or sneak in some quiet time with a good book.
