Instructions
- Begin by making the pasta dough. In a large mixing bowl, combine the flour and salt. Create a well in the center, adding the eggs and olive oil. Gradually mix until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.
- While the dough rests, prepare the filling. In a skillet over medium heat, melt the butter and sauté the garlic until fragrant.
- Add the mushrooms to the skillet, cooking until they release their juices and begin to brown, about 5 minutes.
- Toss in the chopped spinach and cook until wilted. Remove from heat and let cool slightly.
- In a bowl, combine the mushroom and spinach mixture with ricotta and Parmesan cheese. Season with salt and pepper to taste.
- Roll out the pasta dough into thin sheets using a pasta machine or rolling pin. Cut into 2-inch squares.
- Place a spoonful of filling onto each square, brushing the edges with water before folding to seal. Press gently with a fork to ensure closure.
- Boil a large pot of salted water and cook the ravioli in batches for about 3-4 minutes, or until they float to the surface.
- Serve hot with a drizzle of olive oil or your favorite sauce. Garnish with fresh basil if desired.
