- 2 English muffins, split in half
- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
- 4 slices of bacon, cooked and crumbled
- 1/4 cup bell pepper, diced
- 2 tablespoons chives, chopped

- 1 tablespoon butter
If you’re out of English muffins, feel free to substitute with bagels or even a slice of sourdough bread. For those looking to add a bit of heat, try sprinkling some red pepper flakes or adding a dash of hot sauce.
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper and place the English muffin halves on it.
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Melt the butter in a nonstick skillet over medium heat. Add the egg mixture and cook, stirring gently, until just set, about 3-4 minutes.
- Top each English muffin half with a portion of the scrambled eggs, followed by a sprinkle of bacon, bell pepper, and cheese.
- Bake in the preheated oven for 10 minutes or until the cheese is melted and bubbly.
- Garnish with chopped chives before serving.
One tip I’ve learned over the years is to slightly toast the muffins before adding the toppings. This prevents them from becoming soggy and gives them a delightful crunch.
