Feel free to substitute the chicken with grilled tofu or chickpeas for a vegetarian twist. You can also swap out the feta for goat cheese if you prefer a milder taste.
Instructions
- Start by marinating the chicken. In a small bowl, combine olive oil, lemon juice, oregano, garlic powder, paprika, salt, and black pepper. Pour this mixture over the chicken breasts, ensuring they’re well coated. Let them marinate for at least 30 minutes, or overnight for deeper flavor.
- Preheat your grill or skillet to medium-high heat. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Let it rest for 5 minutes before slicing into thin strips.
- While the chicken rests, prepare your vegetables. Halve the cherry tomatoes and slice the cucumber and red onion thinly. Set aside.
- Warm the pitas slightly on the grill or in the oven for a few minutes to make them more pliable.
- To assemble the wraps, spread a generous spoonful of tzatziki sauce on each pita. Top with sliced chicken, cherry tomatoes, cucumber, red onion, crumbled feta, and a sprinkle of fresh parsley.
