- In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, green onions, and beaten egg. Mix until well combined.
- Add the flour, garlic powder, black pepper, and salt to the mixture. Stir until you have a thick, cohesive dough.
- Shape the mixture into small balls, about the size of a golf ball. Roll each ball in breadcrumbs to coat evenly.
- Heat the vegetable oil in a large skillet over medium heat. Once hot, add the potato balls in batches, ensuring not to overcrowd the pan.
- Fry the puffs for 2-3 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer them to a paper-towel-lined plate to drain excess oil.
- Serve warm, garnished with extra green onions if desired.
