  • 8 ounces cooked lobster meat, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely chopped fresh chives (or substitute with green onions)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

If you don’t have fresh lobster on hand, cooked shrimp or crab meat make excellent substitutions. And if you’re looking for a lighter twist, try using Greek yogurt instead of mayonnaise—it keeps the creaminess but adds a tangy brightness that my family can’t get enough of.

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper. This step always reminds me of my grandmother’s meticulous prep—getting everything ready before the fun begins.
  2. In a medium bowl, combine the cream cheese, mayonnaise, lemon juice, Dijon mustard, garlic powder, chives, salt, and pepper. Mix until smooth and creamy. This mix is where all the flavor magic happens, so take a moment to taste and adjust the seasoning.
  3. Fold the chopped lobster meat gently into the cream cheese mixture, being careful not to break up the chunks too much. I find that keeping the lobster pieces slightly chunky gives the pinwheels a wonderful texture.
  4. Unfold the puff pastry on a lightly floured surface and roll it out slightly to smooth any creases, about 10 by 12 inches.
  5. Spread the lobster filling evenly over the puff pastry, leaving about a 1/2-inch border around the edges.
  6. Starting from one long edge, carefully roll the pastry into a tight log. Use a sharp knife to slice the log into 1-inch pinwheels.
  7. Place the pinwheels cut side up on the prepared baking sheet, spacing them about 1 inch apart.
  8. Brush the tops lightly with beaten egg to give them a beautiful golden shine once baked.
  9. Bake for 15-18 minutes, or until the pastry is puffed and golden brown. The smell filling your kitchen at this point is honestly one of my favorite rewards of cooking.
  10. Remove from oven and let cool for a few minutes before serving. These are best enjoyed warm but still delicious at room temperature.
