- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
- Add the bell pepper, zucchini, and mushrooms. Cook until just tender, about 5-7 minutes.
- Stir in the spinach and cook until wilted. Season with salt, pepper, and optional red pepper flakes. Remove from heat.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to form a roux.
- Gradually whisk in the milk, stirring constantly until the sauce thickens. Add nutmeg, salt, and pepper to taste. Set aside.
