- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup honey
- 2 fresh peaches, sliced
- 2 jalapenos, sliced (remove seeds for less heat)
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1/4 cup fresh cilantro, chopped
If you can’t find fresh peaches, canned or frozen peaches work just as well. And if jalapenos are too spicy for your family, try using a milder chili or omitting them altogether for a sweeter dish.
Instructions
- Preheat your oven to 400°F (200°C). This is the perfect time to involve the kids—my little ones love helping me set up the kitchen.
- Season the chicken breasts with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and sear for 4-5 minutes on each side until golden brown.
- In a small bowl, mix honey, apple cider vinegar, and garlic powder. Pour this mixture over the chicken in the skillet.
- Add the sliced peaches and jalapenos to the skillet, tucking them around the chicken. This reminds me of my grandmother’s kitchen, where we’d often tuck surprises into our dishes.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and juicy, with an internal temperature of 165°F (74°C).
- Garnish with fresh cilantro before serving. A sprinkle of green adds that final touch that makes the dish feel complete.
