  • 1/2 teaspoon black pepper
  • 1/4 cup honey
  • 2 fresh peaches, sliced
  • 2 jalapenos, sliced (remove seeds for less heat)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/4 cup fresh cilantro, chopped

If you can’t find fresh peaches, canned or frozen peaches work just as well. And if jalapenos are too spicy for your family, try using a milder chili or omitting them altogether for a sweeter dish.

Instructions

  1. Preheat your oven to 400°F (200°C). This is the perfect time to involve the kids—my little ones love helping me set up the kitchen.
  2. Season the chicken breasts with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and sear for 4-5 minutes on each side until golden brown.
  3. In a small bowl, mix honey, apple cider vinegar, and garlic powder. Pour this mixture over the chicken in the skillet.
  4. Add the sliced peaches and jalapenos to the skillet, tucking them around the chicken. This reminds me of my grandmother’s kitchen, where we’d often tuck surprises into our dishes.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and juicy, with an internal temperature of 165°F (74°C).
