  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 8 cups chicken broth
  • 1 cup acini di pepe pasta
  • 2 cups fresh spinach, chopped
  • Optional: fresh parsley and additional Parmesan for garnish

If you’re out of breadcrumbs, crushed crackers or panko make excellent substitutes. And if you prefer a lighter version, turkey or chicken can replace the beef or pork.

Instructions

Cooking this soup is a delightful process that fills your home with a comforting aroma. Follow these steps to create a meal that’s sure to become a family favorite:

  1. In a large bowl, mix together the ground meat, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper. Shape into small meatballs, about the size of a marble.
  2. In a large pot, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides. Remove and set aside.
  3. In the same pot, add the onion, carrots, and celery. Sauté until the vegetables are tender, about 5 minutes.
  4. Pour in the chicken broth and bring to a boil. Add the meatballs back into the pot.
  5. Reduce the heat and let the soup simmer for 20 minutes, allowing the flavors to meld together.
  6. Add the acini di pepe pasta and cook until al dente, about 10 minutes.
  7. Stir in the chopped spinach and cook for another 2-3 minutes until wilted.
  8. Season with additional salt and pepper to taste. Serve hot, garnished with fresh parsley and a sprinkle of Parmesan cheese if desired.
