- 2 carrots, sliced
- 2 stalks celery, sliced
- 8 cups chicken broth
- 1 cup acini di pepe pasta

If you’re out of breadcrumbs, crushed crackers or panko make excellent substitutes. And if you prefer a lighter version, turkey or chicken can replace the beef or pork.

- In a large bowl, mix together the ground meat, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper. Shape into small meatballs, about the size of a marble.
- In a large pot, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides. Remove and set aside.
- In the same pot, add the onion, carrots, and celery. Sauté until the vegetables are tender, about 5 minutes.
- Pour in the chicken broth and bring to a boil. Add the meatballs back into the pot.
- Reduce the heat and let the soup simmer for 20 minutes, allowing the flavors to meld together.
- Add the acini di pepe pasta and cook until al dente, about 10 minutes.
- Stir in the chopped spinach and cook for another 2-3 minutes until wilted.
- Season with additional salt and pepper to taste. Serve hot, garnished with fresh parsley and a sprinkle of Parmesan cheese if desired.
