Learn how to make delicious Italian Sausage Hoagies. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 pound Italian sausage links (mild or spicy depending on preference)
  • 1 large green bell pepper, thinly sliced
  • 1 large red bell pepper, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 4 hoagie rolls (about 6 inches each)
  • 8 slices provolone cheese (or mozzarella for a milder flavor)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for a little kick)
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup marinara sauce for dipping or spreading

Substitution Tips: If you want a lighter version, turkey or chicken sausage works beautifully without sacrificing flavor. For the rolls, any sturdy sandwich bread or baguette will do in a pinch. And if you prefer a vegetarian twist, swap the sausage for sautéed mushrooms or plant-based sausage alternatives—my family has enjoyed those on busy nights too!

Instructions

  1. Start by heating the olive oil in a large skillet over medium heat. While the oil warms, slice your peppers and onions as thinly as you can. I find this step therapeutic—like chopping away the day’s stress while prepping for a great meal.
  2. Add the sliced peppers and onions to the skillet, seasoning with a pinch of salt, oregano, and red pepper flakes if you’re using them. Cook for about 8-10 minutes, stirring occasionally, until the veggies soften and start to caramelize. The sweet smell of sautéed onions and peppers always takes me back to my grandma’s kitchen.
  3. Push the veggies to the side and add the Italian sausage links to the skillet. Cook them thoroughly, about 10-12 minutes, turning occasionally until browned on all sides and no longer pink inside. For easier eating, you can slice the sausage into rounds or chunks before cooking—just what my kids prefer when they’re hungry and ready to eat fast.
  4. Once the sausage is cooked, mix it with the peppers and onions and add the minced garlic. Stir everything together and cook for another 2 minutes to let the garlic infuse the flavors.
  5. Preheat your oven to 375°F. Slice your hoagie rolls lengthwise, but don’t cut all the way through—think of creating a little pocket for all those delicious fillings.
  6. Spoon the sausage and pepper mixture evenly into each hoagie roll. Layer two slices of provolone cheese over the top. I always tell my family that the cheese is the glue that holds everything—and the melty goodness makes these hoagies irresistible.
  7. Place the filled hoagies on a baking sheet and bake for about 8-10 minutes, or until the cheese is melted and the rolls are slightly toasted. Keep an eye on them—you want melty cheese, not burnt bread!
  8. Remove from the oven and let them cool for a minute or two before serving. If you like, add a side of warm marinara sauce for dipping or spread a little inside the roll for extra flavor.
