- 4 boneless, skinless chicken breasts
- 1/4 cup hot honey
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley (optional, for garnish)
For those who prefer a milder heat, you can substitute regular honey and add a pinch of cayenne to taste. Alternatively, goat cheese can be used instead of feta for a creamier texture.
Instructions
- Preheat your oven to 375°F. This is a good time to think about my grandmother’s advice: “A well-prepared oven is the secret to success.”
- In a small bowl, mix together the hot honey, garlic powder, smoked paprika, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken breasts and sear for about 3-4 minutes on each side, until golden brown. My kids love the sizzle sound, which always brings them running to the kitchen.
- Remove the skillet from heat and drizzle the hot honey mixture over the chicken. Sprinkle crumbled feta on top of each chicken breast.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through and the feta is slightly golden.
- Garnish with fresh parsley before serving, if desired. This final touch always reminds me of how a little greenery can bring a dish to life, just like our family garden does every spring.
