Ingredients
Gathering your ingredients is the first step toward creating magic in the kitchen. Here’s what you’ll need:
- 4 medium sweet potatoes, peeled and cubed
- 1 pound of smoked sausage, sliced into rounds
- 3 tablespoons olive oil
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
If you’re out of smoked sausage, feel free to substitute with chicken sausage or even a plant-based alternative for a vegetarian twist. The heart of this dish is its flexibility, much like the impromptu meals I used to help my grandmother prepare.
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, combine the cubed sweet potatoes, sliced sausage, olive oil, honey, and minced garlic. Add paprika, salt, and pepper, then toss everything together until the sweet potatoes and sausage are well coated.
- Spread the mixture evenly on the prepared baking sheet, ensuring the sweet potatoes and sausage pieces are in a single layer. This helps them cook evenly and become beautifully caramelized.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and the sausage is slightly charred at the edges. Stir halfway through the cooking time for even roasting.
- Once done, remove from the oven and let it cool slightly before serving. Garnish with freshly chopped parsley if desired.
As you prepare this dish, don’t forget to savor the aromas wafting through your kitchen. For me, it’s a reminder of those cherished times in my grandmother’s home, where the smell of roasting vegetables often drew us all to the kitchen.
