Instructions
- Preheat your oven to 425°F (220°C). This higher temperature helps the carrots caramelize nicely without drying out.
- Peel the carrots and cut them into uniform sticks or use baby carrots for a quicker prep. Uniform pieces roast more evenly, which is a tip I learned early on watching my grandmother’s patient hands.
- In a large mixing bowl, whisk together olive oil, honey, minced garlic, salt, and pepper. If you’re adding herbs or chili flakes, toss those in now.
- Add the carrots to the bowl and toss until every piece is well coated. This step is important—don’t rush it. I like to use my hands to really get that honey-garlic mixture to stick.
- Spread the carrots in a single layer on a rimmed baking sheet lined with parchment paper. Overcrowding the pan can cause the carrots to steam rather than roast, so give them some breathing room.
- Roast in the oven for 25 to 30 minutes, flipping the carrots halfway through. You’ll know they’re done when they’re tender and edges are golden brown with a little caramelized crispness.
- Remove from the oven and, if you like, sprinkle a little fresh thyme or chopped parsley for a fresh finish. Serve immediately while warm.
One thing I’ve learned over the years is to watch the carrots closely during those last 10 minutes of roasting.
