Ingredients
Scale
Gathering the ingredients is like assembling pieces of a puzzle; each one plays a crucial role in creating the perfect dish. Here’s what you’ll need:
- 1 pound ground turkey (or substitute with ground chicken for a lighter option)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (14 oz) diced tomatoes
- 1 can (4 oz) green chilies
- 2 cups chicken broth
- 1 cup Greek yogurt (or substitute with sour cream for extra creaminess)
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes. This step always takes me back to my grandmother’s kitchen, where the smell of sautéing onions signaled the start of something delicious.
- Add the ground turkey to the pot, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the chopped bell pepper and cook for another 2-3 minutes until slightly softened.
- Add the black beans, corn, diced tomatoes, green chilies, and chicken broth to the pot. Sprinkle in the taco seasoning, salt, and pepper. Stir well to combine all the flavors.
- Bring the soup to a gentle simmer and let it cook for 15-20 minutes, allowing all the ingredients to meld together. This is when I like to set the table, knowing that soon we’ll be gathered around it with bowls of warmth in our hands.
- Reduce the heat to low and stir in the Greek yogurt, making sure it’s fully incorporated. This will give your soup that creamy texture that’s simply irresistible.
- If desired, sprinkle the shredded cheddar cheese over each serving just before enjoying. I often let my kids add their own toppings, making it a fun and interactive meal.
