  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Gather these ingredients to create your very own taste of the tropics. Feel free to make substitutions based on what you have on hand.

  • 2 cups cooked jasmine rice
  • 1 pound boneless, skinless chicken thighs
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup fresh pineapple chunks
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional: 1 teaspoon red pepper flakes for some heat
  • Optional garnish: sesame seeds and cilantro

Instructions

Follow these steps to bring a taste of Hawaii into your kitchen:

  1. In a medium bowl, combine the pineapple juice, soy sauce, brown sugar, garlic, and ginger. Whisk together until the sugar is dissolved.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Heat the sesame oil in a large skillet over medium-high heat. Remove the chicken from the marinade and sear on each side until golden brown, about 5-7 minutes per side.
  4. Add the sliced red bell pepper to the skillet and sauté until tender, about 3 minutes.
  5. Add the pineapple chunks to the skillet and pour in the remaining marinade. Allow the mixture to simmer until the chicken is cooked through and the sauce has thickened slightly.
  6. Season with salt, pepper, and red pepper flakes if using. Stir in the green onions.
  7. Serve the chicken mixture over bowls of cooked jasmine rice. Garnish with sesame seeds and cilantro, if desired.
