- 1 pound boneless, skinless chicken thighs
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 cup fresh pineapple chunks
- 2 green onions, sliced
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Optional: 1 teaspoon red pepper flakes for some heat
- Optional garnish: sesame seeds and cilantro
Instructions
Follow these steps to bring a taste of Hawaii into your kitchen:
- In a medium bowl, combine the pineapple juice, soy sauce, brown sugar, garlic, and ginger. Whisk together until the sugar is dissolved.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes, or up to 2 hours for more flavor.
- Heat the sesame oil in a large skillet over medium-high heat. Remove the chicken from the marinade and sear on each side until golden brown, about 5-7 minutes per side.
- Add the sliced red bell pepper to the skillet and sauté until tender, about 3 minutes.
- Add the pineapple chunks to the skillet and pour in the remaining marinade. Allow the mixture to simmer until the chicken is cooked through and the sauce has thickened slightly.
- Season with salt, pepper, and red pepper flakes if using. Stir in the green onions.
- Serve the chicken mixture over bowls of cooked jasmine rice. Garnish with sesame seeds and cilantro, if desired.
