  • 1 cup marinara sauce (store-bought or homemade)
  • 1/2 cup plain Greek yogurt or sour cream (for creaminess)
  • 2 large eggs
  • 1/4 cup fresh basil, chopped (optional but highly recommended)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Substitution tips: If you’re not a fan of ground turkey, ground chicken or lean ground beef can be swapped in. For a dairy-free version, use a plant-based yogurt and skip the Parmesan or replace it with nutritional yeast. Zucchini can be replaced with yellow squash or even finely chopped spinach if you want to switch things up.

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or non-stick spray.
  2. Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as you can. This step is key to avoiding a soggy casserole—trust me, I’ve learned the hard way!
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until translucent.
