- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 large green bell pepper, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup low-sodium chicken broth
- Optional: 1/4 teaspoon red pepper flakes for a kick
Feel free to swap the bell peppers for any other veggie you might have at home. Zucchini or mushrooms would be wonderful additions!
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes. This step always reminds me of those early days in my grandmother’s kitchen, where the simple act of sautéing onions felt like magic.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until it’s browned and no longer pink, around 7-8 minutes. Season with salt and pepper.
- Stir in the sliced bell peppers, making sure they’re evenly distributed. Cook for another 5 minutes until the peppers are tender yet still slightly crisp.
- Sprinkle the paprika, oregano, and optional red pepper flakes over the mixture. Stir to combine the spices well.
- Pour in the chicken broth, letting it simmer for 2-3 minutes. This not only deglazes the pan but also infuses the dish with more flavor.
- Give everything a final stir, making sure the turkey and peppers are nicely coated with the spices and broth.
- Taste and adjust the seasoning if necessary. Serve hot and enjoy the flavorful blend of ground turkey and peppers.
