Here’s what you’ll need to create this comforting dish:
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon paprika
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 cup sour cream
- Salt and pepper to taste
- 8 ounces egg noodles
- 2 tablespoons olive oil
- Chopped parsley for garnish
You can substitute ground turkey for a lighter option or use Greek yogurt instead of sour cream for a tangier flavor.
Instructions
- Heat a large skillet over medium-high heat and add the olive oil.
- Add the ground beef, season with salt and pepper, and cook until browned, about 5-7 minutes. Drain excess fat and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the mushrooms and paprika, cooking until the mushrooms are tender, about 5 minutes.
- Sprinkle the flour over the vegetables and stir to combine. Cook for another minute to get rid of the raw flour taste.
- Slowly pour in the beef broth while stirring, making sure there are no lumps. Bring to a simmer and let it thicken for about 5 minutes.
- Reduce the heat to low and stir in the sour cream. Return the cooked ground beef to the skillet and stir to combine. Adjust seasoning with salt and pepper if needed.
- While the sauce is cooking, boil the egg noodles according to package instructions. Drain and set aside.
- Serve the stroganoff over the cooked egg noodles and garnish with chopped parsley.
