- 2 ripe honey peaches, thinly sliced
- 8 ounces white cheddar cheese, sliced or shredded
- 2 tablespoons unsalted butter, softened
- 1 tablespoon honey (preferably local or raw for more depth)
- Optional: a pinch of fresh thyme or rosemary for a herby note
- Salt and freshly ground black pepper, to taste
If you want to switch things up, feel free to use a creamy fontina or gouda instead of white cheddar. For the peaches, if you can’t find fresh ripe ones, a good-quality jar of peach preserves can work in a pinch, but the fresh slices really elevate the sandwich. Butter can be swapped with olive oil for a different flavor profile, though I find butter gives the best golden crust.
Instructions
- Start by washing and drying your peaches. Slice them thinly—about 1/8 inch thick works best to layer nicely without overwhelming the sandwich.
- Butter one side of each bread slice evenly. This will be the exterior that crisps up in the pan.
- Heat a skillet over medium heat. While it warms up, drizzle the honey over the peach slices and toss gently to coat. If you’re adding fresh herbs, sprinkle a little thyme or rosemary now.
- Place two slices of bread, butter side down, in the skillet. Layer on the white cheddar cheese first, then the honey-coated peaches. Season lightly with a pinch of salt and pepper to enhance the sweetness and balance the flavors.
- Top with the remaining cheese slices for extra gooeyness, then cover with the second slice of bread, butter side up.
- Cook for about 3-4 minutes on one side. You’ll want to watch for a beautiful golden brown crust forming—this is when you know the sandwich is ready to flip.
- Carefully flip the sandwich using a spatula. Press down gently to help the cheese melt evenly. Cook for another 3-4 minutes until the second side is golden and the cheese is melted through.
- Remove from the skillet and let it rest on a cutting board for a minute. This helps everything settle and prevents the cheese from spilling out too much when you slice.
- Cut the sandwich in half and serve immediately. Watching the cheese stretch as you pull apart the halves is one of those simple joys I love sharing with my kids.
