- 1 pound Italian sausage links, sliced into bite-sized pieces
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 12 ounces pasta (fettuccine or your choice)
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley (optional)
Feel free to swap out the Italian sausage for chicken or turkey sausage if you prefer, and if you’re feeling adventurous, a sprinkle of red pepper flakes can add a delightful kick.
Instructions
- Start by bringing a large pot of salted water to a boil. Add the pasta and cook until it’s al dente, according to the package instructions. Drain and set aside.
- In a large skillet over medium heat, melt the butter. Add the sausage pieces and cook until they are browned and cooked through, about 8-10 minutes.
- Stir in the minced garlic and cook for another minute, until fragrant. This step always takes me back to my grandmother’s kitchen, where the aroma of garlic was a constant, comforting presence.
- Reduce the heat to low, pour in the heavy cream, and let it simmer for a couple of minutes until it starts to thicken. Stir in the Parmesan cheese until it’s melted and the sauce is creamy.
- Add the cooked pasta to the skillet, tossing everything together to ensure the pasta is well-coated with the sauce. Season with salt and pepper to taste.
