- 1 fresh pineapple, peeled, cored, and sliced into 1/2-inch rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup cold club soda
- Vegetable oil for frying
- Powdered sugar for dusting
- Optional: coconut flakes for garnish
Instructions
- Heat about 1 inch of vegetable oil in a deep skillet over medium-high heat until it reaches 350°F.
- In a large bowl, whisk together the flour, cornstarch, sugar, baking powder, and salt. The mixture should be well combined and free of lumps.
- Gradually add the cold club soda to the dry ingredients, stirring until you have a smooth batter. The consistency should be similar to pancake batter.
- Dip each pineapple ring into the batter, ensuring it’s fully coated. Let any excess batter drip off before frying.
- Carefully place the battered pineapple rings into the hot oil. Fry them in batches, about 2-3 minutes per side, or until golden brown and crispy.
- Using a slotted spoon, transfer the fried rings to a paper towel-lined plate to drain any excess oil.
- Dust the fried pineapple rings with powdered sugar and, if desired, sprinkle with coconut flakes for an extra touch of sweetness and texture.
