Instructions

  1. Heat about 1 inch of vegetable oil in a deep skillet over medium-high heat until it reaches 350°F.
  2. In a large bowl, whisk together the flour, cornstarch, sugar, baking powder, and salt. The mixture should be well combined and free of lumps.
  3. Gradually add the cold club soda to the dry ingredients, stirring until you have a smooth batter. The consistency should be similar to pancake batter.
  4. Dip each pineapple ring into the batter, ensuring it’s fully coated. Let any excess batter drip off before frying.
  5. Carefully place the battered pineapple rings into the hot oil. Fry them in batches, about 2-3 minutes per side, or until golden brown and crispy.
