Ingredients
- 1 cup (2 sticks) unsalted butter
- 1 ½ cups granulated sugar
- 3 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup whole milk, warmed
If you’re looking to swap things up, feel free to try brown sugar instead of granulated for a deeper flavor, or use almond milk as a dairy-free option. I find that the browned butter is the real star here, so I don’t recommend substituting it, but a vegan butter alternative could work in a pinch if you’re mindful of the flavor.
Instructions
- Start by preheating your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper for easy removal.
- In a medium saucepan, melt the butter over medium heat. Continue cooking, swirling the pan occasionally, until the butter turns a rich golden brown and smells nutty—about 5 to 7 minutes. This step is key and brings out the signature flavor. Remove from heat and let it cool slightly.
- While the butter cools, whisk together the flour, baking powder, and salt in a bowl and set aside.
- In a large mixing bowl, combine the browned butter and sugar. Using a hand mixer or stand mixer, beat on medium speed until the mixture is smooth and slightly fluffy, about 2 minutes.
- Add the eggs one at a time, beating well after each addition to fully incorporate.
- Stir in the vanilla extract.
- Alternate adding the dry ingredients and the warm milk to the batter in three parts, beginning and ending with the dry ingredients. Mix gently after each addition, being careful not to overbeat. The batter should be smooth but tender.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 40 to 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
One tip I’ve learned from many afternoons spent baking with my kids is to embrace the imperfections. This cake has a rustic charm that makes it all the more inviting. Sometimes, the cracks on top or slight unevenness tell the story of a home kitchen filled with laughter and love.
