  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Juice of 1 lime
  • 8 flour tortillas
  • Optional toppings: sour cream, shredded cheese, and fresh cilantro

Instructions

Follow these simple steps to bring this flavorful dish to life:

  1. Begin by greasing your crockpot with a little olive oil to prevent sticking.
  2. Place the chicken breasts at the bottom of the crockpot.
  3. Layer the sliced bell peppers and onions over the chicken.
  4. In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Sprinkle this seasoning blend evenly over the chicken and vegetables.
  5. Drizzle the olive oil over the top and add the lime juice.
  6. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
  7. Once cooked, remove the chicken and shred it with two forks. Return the shredded chicken to the crockpot and stir to combine with the vegetables and juices.
  8. Warm the tortillas in a skillet or microwave, then fill each with a generous scoop of the chicken and vegetable mixture.
