- 1 pound ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 3 cups chicken broth
- 1 cup shredded carrots
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1/2 cup sour cream
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
Feel free to substitute ground turkey for a leaner option or add a pinch of cayenne for a bit of heat. It’s all about making it your own!
Instructions
- In a skillet over medium heat, crumble the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
- Add the chopped onion and minced garlic to the beef, cooking until the onion is translucent, about 3 minutes.
- Transfer the beef mixture to your crockpot. Stir in the diced potatoes, chicken broth, shredded carrots, salt, pepper, and paprika.
- Cover and cook on low for 6-8 hours or until the potatoes are tender.
- About 30 minutes before serving, whisk together the milk and flour in a small bowl. Stir into the soup along with the shredded cheddar cheese. Cover and cook for an additional 30 minutes, stirring occasionally, until the soup thickens.
- Stir in the sour cream just before serving for a creamy finish.
