  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 8 ounces uncooked rotini pasta
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, diced avocado, sliced jalapeños

Instructions

Follow these simple steps to bring this dish to life:

  1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
