If you’re looking to make these dairy-free, you can swap the Parmesan for nutritional yeast, which brings a cheesy flavor without the dairy. I’ve tried it both ways, and while the Parmesan is my personal favorite, the nutritional yeast version is a lovely alternative for those with dietary restrictions.
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
- Cut the zucchinis into fry-shaped sticks—aim for uniform thickness, about 3 inches long and 1/2 inch thick. This helps them cook evenly.
- In a shallow bowl, whisk the eggs until smooth. In another bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, salt, and pepper.
- Dip each zucchini stick into the beaten eggs, letting any excess drip off, then coat thoroughly with the breadcrumb mixture. Press gently to make sure the coating sticks well.
- Place the coated zucchini fries on your prepared baking sheet in a single layer, making sure they’re not touching. This spacing is key for crispiness.
- Lightly spray the fries with cooking spray or drizzle a little olive oil over them. This helps them achieve that golden crunch without deep frying.
- Bake in the preheated oven for about 20-25 minutes, flipping halfway through. Look for a golden, crispy exterior and tender zucchini inside.
- Remove from oven and let cool for a couple of minutes before serving. This little pause helps the coating set perfectly.
I often find that flipping the fries halfway through baking is the secret to even crispiness. When I first tried these, I skipped that step and ended up with fries that were golden on one side and soggy on the other. Lesson learned—and now my family expects perfection every time!
