- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 8 large flour tortillas
- Vegetable oil for frying
- Optional toppings: sour cream, salsa, guacamole
If you’re looking for a lighter version, you can substitute ground turkey for the beef or use whole wheat tortillas. The beauty of home cooking is making each recipe your own, just like my grandmother taught me when I first learned to cook.
Instructions
- In a skillet over medium heat, cook the ground beef until it’s browned, about 5-7 minutes. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet, sautéing until the onion is translucent, about 2-3 minutes.
- Stir in the cumin, chili powder, salt, and pepper. Cook for another minute, allowing the spices to bloom and fill your kitchen with their aroma.
- Remove the skillet from heat and stir in the shredded cheese until it’s melted and well combined with the beef mixture.
- Lay a tortilla flat on a clean surface and place about 1/2 cup of the beef mixture in the center. Fold in the sides, then roll up from the bottom to create a burrito shape. Repeat with the remaining tortillas and filling.
- In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Once the oil is hot, carefully place the chimichangas seam side down in the skillet.
- Fry each side until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
- Serve hot with your choice of toppings like sour cream, salsa, and guacamole. Enjoy the crunch and the rich, melty filling inside.
