Creating these bites requires just a handful of ingredients, many of which you might already have in your pantry. Here’s what you’ll need:
- 1 pound of fresh salmon, skin removed and cut into 1-inch cubes
- 1 cup of all-purpose flour
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 large eggs, beaten
- 1 cup of panko breadcrumbs
- 1/2 cup of mayonnaise
- 2 tablespoons of sweet chili sauce
- 1 tablespoon of sriracha (adjust to taste)
- 2 tablespoons of chopped green onions for garnish
If you’re looking to make a healthier version, you can substitute whole wheat flour for the all-purpose flour, or use almond flour for a gluten-free option. The panko breadcrumbs give these bites their crispy texture, but you can use crushed cornflakes if that’s what you have on hand.
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine the flour, salt, and pepper. In another bowl, place the beaten eggs. In a third bowl, add the panko breadcrumbs.
- Dip each salmon cube into the flour mixture, shaking off any excess, then into the egg, and finally into the panko breadcrumbs, ensuring each piece is well-coated.
- Arrange the salmon bites on the prepared baking sheet and spray lightly with cooking spray. This will help them achieve a golden, crispy texture.
- Bake for 12-15 minutes, or until the salmon is cooked through and the coating is crispy and golden brown.
- While the salmon is baking, prepare the Bang Bang sauce by mixing the mayonnaise, sweet chili sauce, and sriracha in a small bowl.
- Once the salmon bites are done, drizzle them with the Bang Bang sauce and garnish with chopped green onions.
