Ingredients
Scale
- 4 cod fillets (about 6 ounces each)
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 tablespoon Dijon mustard
- Cooking spray
- Fresh lemon wedges, for serving
Instructions
- Preheat your air fryer to 400°F. This ensures that your cod gets that delightful crispy crust.
- In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well to ensure the flavors are evenly distributed.
- In another bowl, whisk together the eggs and Dijon mustard. The mustard adds a tangy depth that elevates the dish.
- Pat the cod fillets dry with paper towels. This helps the coating adhere better.
- Dip each fillet into the egg mixture, allowing any excess to drip off, and then press into the breadcrumb mixture, coating both sides evenly.
- Spray the basket of your air fryer with cooking spray to prevent sticking, then place the breaded fillets in a single layer. You may need to cook them in batches depending on the size of your air fryer.
- Cook for 10-12 minutes, flipping halfway through, until the cod is golden brown and flakes easily with a fork.
- Serve immediately with fresh lemon wedges for a burst of brightness.
