- 1 pound of linguine or your favorite pasta
- 2 lobster tails, cooked and chopped
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
- Juice of 1 lemon
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the garlic and red bell pepper to the skillet, cooking for another 2 minutes until the pepper softens.
- Stir in the Cajun seasoning, cooking for 1 minute to let the flavors bloom.
- Pour in the heavy cream, stirring to combine. Let it simmer for 2-3 minutes until slightly thickened.
- Add the cooked lobster and Parmesan cheese, stirring until the cheese is melted and the lobster is heated through.
- Toss the cooked pasta in the sauce, ensuring every strand is well-coated. Season with salt, pepper, and lemon juice to taste.
- Garnish with fresh parsley before serving.
